The gem form of Steven is not Pink shape shifting, it’s Steven. When Rose said “we both can’t exist” she meant it in every word. She could not exist, period, not physically or the gem. She released her mental and physical form, the half she gave Steven was her gem, that’s it. She created a clean slate making it so not only could Stevens physical form grow AROUND it safely but his gem form could grow IN it safely. Steven’s gem form inside him but his human form born, walking about, he was a true half gem half human, but 100 percent Steven. Without the gem he is only half of himself. There is no Rose anymore, what he experienced was essentially what gems experience when shattered, split in two.
